  • 5-6 ripe Palisade peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 pre-made pie crusts
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten
  • 1 tablespoon granulated sugar, for topping

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, gently toss together the sliced peaches, sugar, flour, cinnamon, nutmeg, and lemon juice until well combined.
  3. Place one of the pie crusts into a 9-inch pie dish, then spoon the peach filling into the crust.
  4. Dot the top of the peach filling with the pieces of butter.
  5. Place the second pie crust over the filling and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  6. Brush the top crust with the beaten egg, then sprinkle with the remaining tablespoon of sugar.
  7. Place the pie on a baking sheet to catch any drips, then bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Allow the pie to cool for at least 1 hour before slicing and serving.
