Ingredients

  • 1 1/2 cups gingersnap crumbs

Instructions

  1. Preheat oven to 350°F. Mix gingersnap crumbs, 1/4 cup sugar and butter in a medium bowl. Press into the bottom and 1-inch up the side of a 9-inch springform pan. Bake for 10 minutes. Set aside.
  2. Beat cream cheese and 1 cup sugar in a large mixing bowl until smooth. Add pumpkin, vanilla extract, eggs, cinnamon, nutmeg, and cloves. Beat until smooth. Pour into crust.
  3. Bake for 55 to 60 minutes or until edge is set but center still moves slightly. Remove from oven and cool on a wire rack. Refrigerate for at least 4 hours or overnight. Remove side of springform pan before serving.
