Keto King Cake Recipe
Indulge in a classic Mardi Gras treat without breaking your ketogenic diet with this delicious Keto King Cake. This recipe is the perfect way to celebrate the festivities while still staying true to your low-carb lifestyle. Made with almond flour and sweetened with erythritol, each bite is full of flavor and decadence.
Start by preheating your oven to 350°F (175°C). In a large mixing bowl, combine 2 cups of almond flour, 1/4 cup of coconut flour, 1/3 cup of erythritol, 2 teaspoons of baking powder, and a pinch of salt. Mix well until all the dry ingredients are fully incorporated.
In a separate bowl, whisk together 4 large eggs, 1/2 cup of melted coconut oil, 1/2 cup of unsweetened almond milk, and 1 teaspoon of vanilla extract. Slowly pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
Next, prepare the filling by combining 1/2 cup of softened cream cheese, 1/4 cup of erythritol, and 1 teaspoon of cinnamon in a small bowl. Mix well until the filling is creamy and smooth.
Pour half of the cake batter into a greased 9-inch round cake pan. Spread the cream cheese filling evenly over the batter. Top with the remaining cake batter and gently spread it to cover the filling completely.
Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Once the cake is cooled, prepare the glaze by mixing together 1 cup of powdered erythritol and 2 tablespoons of unsweetened almond milk in a small bowl. Drizzle the glaze over the cake, allowing it to drip down the sides.
For a festive touch, decorate the top of the cake with colored sugar-free sprinkles in traditional Mardi Gras colors – purple, green, and yellow.
Slice the Keto King Cake into 10 servings and enjoy this delightful low-carb dessert. Each bite is a taste of Mardi Gras magic without the guilt. Share it with family and friends, and let the good times roll!
