Instructions

  1. Mash your 8 lbs of 2-row Pale Malt, 1 lb of Flaked Corn, 1 lb of Vienna Malt, 0.5 lb of Crystal 20 Malt, and 0.5 lb of Carapils Malt with 3 gallons of water at 152°F for 60 minutes.
  2. Vorlauf until the runnings are clear, then collect the sweet wort in your brew kettle.
  3. Bring the wort to a boil and add 0.75 oz of Cluster Hops. Boil for 45 minutes.
  4. Add 0.25 oz of Liberty Hops at 15 minutes remaining in the boil.
  5. Add another 0.25 oz of Liberty Hops at 5 minutes remaining in the boil.
  6. After the 60-minute boil, cool the wort and transfer it to your fermenter.
  7. Pitch the American Ale Yeast into the fermenter and let it ferment at a temperature of around 65°F for 1-2 weeks.
  8. Once fermentation is complete, transfer the beer to secondary fermentation if desired, and let it condition for another 2-3 weeks.
  9. Add the corn sugar to the beer when bottling to achieve carbonation.
  10. Bottle the beer and let it carbonate for 2-3 weeks.
