Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups heavy cream
  • 12 ounces semisweet chocolate, chopped
  • 1/4 cup unsalted butter, at room temperature
  • 1 1/2 cups unsalted butter, at room temperature
  • 5 cups confectioners’ sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually add the boiling water to the batter, stirring constantly. The batter will be thin, but that’s okay. It will result in a moist cake.
  5. Divide the batter evenly among the prepared cake pans. Smooth the tops with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. To make the ganache, heat the heavy cream in a saucepan over medium heat until it just begins to boil.
  9. Remove the saucepan from the heat and add the chopped semisweet chocolate. Let it sit for 1 minute, then whisk until smooth and well combined.
  10. Add the room temperature unsalted butter to the ganache and whisk until melted and fully incorporated. Set the ganache aside to cool and thicken.
  11. Meanwhile, make the chocolate buttercream frosting. In a large mixing bowl, beat the room temperature unsalted butter until creamy and smooth.
  12. Add the confectioners’ sugar, cocoa powder, milk, and vanilla extract to the butter. Beat until light and fluffy.
  13. Once the cakes have cooled, spread a layer of ganache on top of one cake layer. Place another cake layer on top and repeat the process. Reserve some ganache for decorating.
  14. Place the final cake layer on top. Frost the sides and top of the cake with the chocolate buttercream frosting.
  15. Drizzle the remaining ganache over the top of the cake, allowing it to drip down the sides.
  16. Decorate the cake with additional chocolate shavings, if desired.
  17. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld and the ganache to set.
